How do I do this in photoshop?

There are many ways of doing this. The simplest is to use one of the marque tools and select the face you want, copy and paste it into the new image. Then you can erase sections of the new face to blend. A better way would be to copy the whole image and paste it into the new image. Then mask out everything you don't want.
